The menu at Bourbon House is always ripe with the season's finest
local ingredients:

Golden Meadow Soft-shell Crabs, Lafourche Raised Redfish, Gulf Speckled Trout, Wild Des Allemands Catfish, Creole Tomatoes, Amite Blueberries, Chilton County Peaches...

"New Orleans enjoys a year-long growing season, but during the summer, we get really spoiled with all of our local seafood and produce. We'll have Lafourche Raised Redfish all summer long, and plenty of Gulf Speckled Trout and Wild Des Allemands Catfish until the weather turns really hot.
Creole tomatoes are all over our menu right now. I love them in the Louisiana Seafood Cioppino we've been running with our Golden Meadow Soft-shell Crabs. In July we'll have fun with the incredible Juliet and Tangerine heirloom tomatoes we get from my buddy Mark Babcock at Harmony Farms.

Our friend Mr. Pat in Amite takes good care of us. He hand-picks and hand-washes all of our blueberries for us. After we've gone through all of those, we move on to Chilton County peaches, then local figs from Jim and Louise in Pumpkin Center.
In late summer, look for fingerling potatoes and all sorts of peppers. Red Gypsy peppers are my favorite. All of that should keep me busy until rabbit season kicks off in October." - Chef Jared Tees
